About 1000 360 captured about every 3 feet with Insta360x5 in Interval Photo mode. One photo every 3s (plus a good 5 seconds or so to write the photo to the SD card). Took a good 4 hours, plus another 2 hours to do the outside (Drone+360 Video, linked below).
Initially aligned with RealityScan and PostShot, but wasn't quite happy. Took days to run the alignment, make some tweaks, then more days to align. Didn't turn out right.
Then I discovered Spirula, which can process INSV (Insta360 video) files natively (but not INSP [photo] files). It just extracts the frames from the video and splits them in half. So I made a script that split all the INSP files in half into cam0 and cam1 jpeg files, fed it to Spirula, and it did a phenomenal job at aligning everything and training the splat. I had it create depth and normal maps to help fill in the walls.
Aligning the photos took probably 15 hours, training the splat was another 20 hours or so, give or take.
Final editing done in SuperSplat editor.
